Banana Pancakes

This will make enough for 2 adults or one adult and 3 children, to make a larger batch simply double everything,these keep super well (I have frozen them before) and make for super easy lunches or breakfasts


Prep time: 15 min     cook time: 20 min 

Ingredients:

-  4 Bananas

- 5 egg whites

- 1/4 cup flour of choice (I love coconut or almond!)

- Cardamom (optional)

- Cinnamon (optional)  

- Coconut oil

Toppings

- Crushed pecans 

-  Frozen fruit; melted, I love to use this as my ‘syrup’ 

-Almond butter

How to make:

Step 1: Mash bananas and add 5 egg whites 

Step 2: In separate bowl mix flour and a sprinkle of cardamom and cinnamon 

Step 3: Combine and mix 

Step 4: Put coconut oil in pan and let it melt, then using scoop, dump pancakes and flatten (I make mine small - feels like more volume and they cook better) 

Step 5: Let them cook about 5 minutes on medium heat and flip 

Step 6: place on a plate, add toppings and eat
