Chia Seed pudding

I love this as breakfast or you can enjoy is as a dessert or snack, the options are endless! It will keep in the fridge well for a week so it is great for meal prep! 

Prep time: 5 min       Cook time: 0 min      Set time: 2 hours 

Ingredients:

  • 1 can coconut milk

  • 1/4C black chia seeds

  • A dash of cinnamon

Topping

  • 1/4C melted frozen fruit

  • A sprinkle ground flax seed

  • Roasted pecans (place on baking sheet in oven at 350* for 9 minutes) 

How to: 

1. Combine all ingredients in a bowl and mix together, divide into portions (this makes ~4) 

2. Let stand in fridge for 2 hours. 

3. Add toppings (or you can mix everything together a in one go -> this just makes it look prettier
